Beets and Brain Health

Sometimes I need to have my beets as a tasty treat. Here's one of my favorite recipes.

BEET BREAD
2 Cups blanched almond flour
1/2 tsp sea salt
1/2tsp baking soda
1tsp ground cinnamon
1/4cup grapeseed oil
1/2 cup agave nectar
2 large eggs
1cup grated beets
1/2 cup chopped walnuts
1/4 cup raisins or goji berries or mixture of both
Preheat oven to 350. Grease a loaf pan with grapeseed oil and dust with almond flour.
Combine all dry ingredients in a large bowl. In a medium bowl whisk together the eggs, agave, and grapeseed oil. Blend the dry ingredients into the wet ingredients and thoroughly combine. Fold in beets, nuts, and raisins.
Bake for 50-60 min on the bottom rack of the oven.
Let cool for an hour.

Hi friends,
I am not the most internet savvy but my daughter,Alexandra, decided I should join the 21st century by creating blog to share with you my thoughts and ideas regarding CCSVI, health, and lifestyle. I am no expert, although I do have degrees in Occupational Therapy and Counseling.
Since my son,Devin's, diagnosis of Multiple Sclerosis in 12/09 I have been consumed in trying to figure out what he can do to keep himself healthy and happy. There are only so many things we have control over and what we put into our mouths, what we physically choose to do and how we view the world are just to name a few.
This blog is meant for us to share, to be part of the larger CCSVI family and help each other move this cause along.
I will share what I have done for my son and I hope you will share your thoughts here as well.
The grass roots movement is unstoppable and I look forward to taking this journey with you.
